HOW TO MAKE ICHIGO DAIFUKU MOCHI




     Moci is a Japanese cake made from glutinous rice, pounded to make it soft and sticky, then shaped into a round shape.

Ichigo Daifuku is a mochi cake filled with strawberries and red bean paste.

Mochi cakes have been used to celebrate new year for nobles in Japan from 794-1185, during the Heian period.  No wonder the tradition in Japanese society now is to eat mochi when celebrating the new year.  Apart from being enjoyed by nobles, mochi cake is also often eaten by farmers in winter.  The goal is to increase stamina.

    Mochi is not only famous in Japan, several countries around Japan such as Korea, China, Taiwan to Indonesia are also familiar with mochi.

(Japanese: 餅; Chinese: (麻糬)) has recently been very popular among Indonesians, especially among teenagers and children who really like the soft texture of mochi and its delicious taste.

Here is a recipe for making Japanese mochi :

Mochi Skin Ingredients:

  •  145 grams of glutinous flour
  •  1 sachet of full cream powdered milk
  •  1 tbsp cornstarch
  •  50 grams of sugar
  •  1 tbsp oil
  •  160 ml of water
  •  sufficient coloring

Red bean filling recipe:

  • 250 grams of red beans, soak overnight
  • 1.5 L of water
  • 160 gr of sugar 
  • 2 pinches of salt
  • 30 gr vegetable oil
  • 1 sheet of pandan leaves
  • Strawberry to taste

Dressing Material:
  • 40 grams of cornstarch
  • 1 pandan leaf 
  • roasted until dry
How to make:

1.  The first step is to make the red bean filling first.Boil red beans that have been soaked overnight until boiling.  Then remove the dirt and boil again until tender with new water. :
  • When it's soft, put the red beans and water into the blender.  Then blender until smooth.
  • Move to Teflon.  Add sugar, salt, vegetable oil and pandan.  Cook over low heat until it thickens and doesn't stick.
  •  Leave it to cool.
2. Make mochi dough.
  • Heat a steamer pot
  •  Add the glutinous rice flour, granulated sugar, salt, oil and also liquid milk.  Stir until the mixture is evenly mixed.  Then add coloring to make it look interesting.
  • place the dough in a greased bowl.  Then steam for about 30 minutes until the mixture is cooked.
3. While waiting for the dough to cook, take the red bean filling.  Flatten and place a strawberry in the middle.  Strawberry wrap with red bean dough.

4. Remove the mochi dough from the steamer.  Knead the dough.  Sprinkle with cornstarch then repeat the kneading process until the dough feels smooth.

5. Take a little mochi dough.  Then flatten it and place the filling in the middle.  Close it tightly and form a circle.  After that, roll it in the roasted flour, the mochi is ready to be served.
